The history of the Moulin de Colagne dates back to the distant 13th century, in 1261, this already venerable mill found itself at the heart of a historic transaction between the King of Aragon and the King of France, proving its central role in the region.

1677, an essential passage for trade

Sire Cahuzac, Consul of Chirac in Lozère, underlines the crucial importance of the Moulin de Colagne. He declares that among all the bridges of the diocese, the one which spans the Colagne at Chirac is one of the most important for trade, serving as the main passage between Languedoc and Auvergne. The Moulin de Colagne builds henceforth a solid reputation as a pillar of local commerce.

Since then, the Moulin de Colagne has come a long way, passing through several owners who have contributed to its growth and development. Shaping it to become the iconic building we know today.

Since 1917, the Constans family has taken care to preserve and perpetuate the tradition and historical know-how of the Moulin de Colagne and its processing on Flint millstones. This century-old transmission skilfully combines contemporary techniques with ancestral expertise, creating a unique synergy.

The extension of the mill

The history of the Moulin de Colagne reflects our ability to combine authenticity, tradition and innovation. We adapt our spaces to needs and standards while preserving our heritage. Our goal is to reconcile tradition and modernity, altogether in a friendly atmosphere.

This is why, in 2018, we took a new step with the construction of a brand-new stone mill. And today, in 2023, we are continuing our development with a second extension.

To better serve our growing customer base and guarantee excellent flour production, we have recently expanded our facilities. These new stone mills, equipped with the SODER system, preserve our artisanal expertise. They ensure exceptional grinding quality, retain the nutritional qualities of wheat grain and preserve the authentic flavour of our flours.

In addition, these new spaces blend harmoniously into the historic architecture of the site, preserving its timeless charm which renders the uniqueness of the Moulin de Colagne. Our expansion is the guarantee of thoughtful modernization, respecting the heritage of the past whilst preparing the future of the mill.
