Choosing the right flour depends on its use and involves understanding the different varieties of wheat and cereals. From white flour, to almost universal flour (T45 -T80), semi-wholemeal (T110), wholemeal (T150) or integral (T170), each flour has its own particularities, benefits and uses.

Stone millstone

The flint stone wheel occupies a central place in our mill, being the heart of our production process. This artisanal method allows us to preserve the natural aromas of the grain and create exceptional products, known for their distinct qualities and flavours. By using the flint millstone, coupled with the Soder system, we are able to guarantee regular grinding without causing overheating, thus preserving the essential characteristics of our flours.

The Soder system

The Soder system

The SODER system is a method invented to transform semolina into flour in the most efficient way, minimizing the expenditure of motive power. It allows to obtain high quality fine flour by reducing the semolina without heating it, guaranteeing better flour quality. Invented by Oscar Soder in 1912, it has many advantages, in particular that of preserving the nutritional quality of the wheat germ throughout the milling process.

Since our beginnings, we have devoted our efforts to preserving traditional know-how while raising the quality of our products. Our quality department carries out in-depth analyses to guarantee the conformity and quality of our products, thus providing additional assurance to our customers.

Our certifications

We are proud to hold the Organic Agriculture (AB) certification, demonstrating our commitment to quality and the environment. We are also FCA certified, for the supply of raw materials for animal feed; and obtaining the ISO 22000 certification is in progress to guarantee a quality and safe product.

A local partner

As a local partner, we are committed to preserving our terroir and producing top-quality products. We place our customers at the heart of our approach and work closely with our various partners to meet their needs. We give priority to local and regional suppliers, to ensure that the quality of our products is firmly rooted in our region. We also work with the association ‘Le Clos du Nid’, committed to helping people with disabilities, to package our 1kg and 5kg bags of flour. It is a human commitment that is close to our hearts.

The organic sector

Since 1990, the Moulin de Colagne has been committed to organic production. Our aim is to produce quality products that are healthy, authentic and natural. With over 30 years’ experience in this field, our mill meets today’s consumer demands. By investing in the organic sector, we also aim to showcase our terroir, the department of Lozère, a region that has managed to preserve its natural heritage and its roots.

For several years now, the Moulin de Colagne has been working with the Limagne chain, renowned for its exceptional milling wheat and its commitment to responsible agriculture. This chain promotes the values of health, environment and human commitment. Our work with this sector enables us to provide our customers with top-quality products, while contributing to sustainable development and supporting local farming communities.
