Small spelt is the ancestor of all our wheat varieties. Triticum Monococum or einkorn is a wild grass native to the Near East. Petit épeautre bread is distinguished by its low gluten content. It is generally well tolerated by people disturbed by soft wheat proteins.
Meule Petit Epeautre bio intégral is a T150 ochre-colored flour. It is a top-quality organic product. It is stone-ground, giving it a unique flavor and texture.
This flour is used for molded breads with hydration levels close to 100%. It produces tasty, easily digestible products with sweet and spicy aromas. This makes it the perfect nutritional bread.
