Our mill has preserved the tradition of flint stone milling. This method has its roots in the ancient history of milling. Flint millstones are much more than just a tool; they are the heart of our business. This milling technique preserves the authentic characteristics of cereals, ranging from flavour to nutritional value. When the grains are ground between these millstones, the aromas and essential qualities are preserved. This gives our flours their unique flavour and exceptional texture.

Refining with SODER

Another secret of our quality lies in the SODER refining process, a technique that enhances our flours by revealing their distinctive characteristics. SODER is a delicate refining process that completes the milling process. The end result is an exceptional flour, renowned for its superior quality.

The advantages of our production methods:

Preserving the traditional methods used to produce our flours has numerous advantages for all our products:

  • A higher ash content for the same extraction rate
  • Finer grain size
  • Presence of wheat germ in the flour: vitamins, minerals, etc.

Exceptional bread-making behaviour:

  • Compared with cylinder flour, millstone flour has a hydration rate that is 3 to 4% higher.
  • It is more tolerant and easier to bake
  • Better fermentation and development thanks to the presence of wheat germ in the flour and a much better starch-to-water ratio
  • Appearance: greater loaf volume, better blade throw
  • Uniform colour with no pitting, pronounced cream to grey colour depending on the type
  • The crumb is nicely fluffy, with a typical, pleasant flavour.
