Small spelt is the ancestor of all our wheat varieties. Triticum Monococum or einkorn is a wild grass native to the Near East. Petit épeautre bread is distinguished by its low gluten content. It is generally well tolerated by people disturbed by soft wheat proteins.

Meule Petit Epeautre organic white flour is a yellow-ochre T80. It is a top-quality organic product. It is stone-ground, giving it a unique flavor and texture.

This flour is ideal for banneton or molded breads. It produces tasty, easily digestible products with sweet and spicy aromas.
